cookies as promised!

here are the lime and coconut cookies i made.... well the second batch of them. i made these a little smaller than the first batch... portion control! lol i also dusted them with confectioners sugar for some extra love. unfortunately i didn't let the first half cool completely before dusting them and it is a little sticky... but the second half are just perfect. i will probably bring them to the library or student lounge area to share with my hard working classmates. good luck everyone!


i apologize for the awful photography... im going to go ahead and blame it entirely on my camera phone... but i suppose there might be a teensy bit of it attributed to my lack of skill too. :p

please dont be put off by the photo... they really are delicious! the perfect cookie for a springtime afternoon snack.

*** i gave them to a friend for her birthday and she loved them! she claims she ate 8 in one day... and mind you, this girl is super fit! ive never seen her eat anything except hummus, apple and yogurt. thats how good they are :p haha**

here is the recipe if you are interested:

1 cup flour
1/2 cup granulated white sugar
1/4 cup fresh lime juice (can be adjusted to taste)
1/4 cup toasted sweetened coconut flakes
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 egg
zest of 1 lime
confectioners sugar (for dusting)

preheat the oven to 350. you can throw in the coconut flakes in to toast as the oven is preheating.... hoorah for multitasking! just keep an eye on it.

as always... mix the wet and dry ingredients separately and then slowly add the dry into the wet. honestly.. i think you could add maybe a couple tablespoons more flour if you wanted to make cookie drops. i think i will do that next time.

if you want the cookies to keep a rounder shape... refrigerate dough first. if you want them to flatten out... continue on!

make rounded teaspoons of dough and with appropriate spacing (if cooled, 1 inch apart. if not cooled, 1.5 inches apart).

spray cookie sheet (or aluminum foil with nonstick oil spray).

bake 10 minutes or until bottom is slightly browned on bottom.

let cool and dust with confectioners sugar.
